Homemade Chocolate Coconut Water

Confession. I am addicted to coconut water. I can’t stand it plain, but with a splash of pomegranate juice or chocolate, I can’t get enough of the stuff.

But apparently I am not the only one who is in love with chocolate coconut water. Chocolate coconut water is sold out everywhere around where I live, even online. So what’s a girl to do when she is seriously jonesing for chocolate coconut water? Make it herself.

Ingredients:
1 and 1/2 tablespoons cocoa powder
pinch of salt
1 tablespoon sugar
1/4 very warm water (or coconut water)
1 and 3/4 cup coconut water

In a heatproof bowl combine cocoa, salt and sugar. Whisk in the 1/4 cup warm water (or coconut water) until the ingredients are dissolved and the liquid is smooth. Add the coconut water and whisk thoroughly. Pour over ice or chill before serving. You can easily add more cocoa powder for a stronger flavor more sugar if you want yours a little sweeter.

To be honest I was terrified to try this. I thought it might ruin it for me, but it ended up tasting just as good, if not better than the one I buy. The only thing to note is that it does separate a bit when it’s in the fridge. Be sure to shake it real quick before you drink it.

Coconut water is not only a great way to rehydrate throughout the day, but it is also a great addition to your after-workout recovery. I also like it as a light dessert after meals.

Sustainable Reading

I have always loved the library. When I was little my mom and I used to go with a canvas bag and fill it to the brim. Within a day we would be finished with all of the books and I would be begging to go back. It was to the point where all of the librarians knew me and I could instantly recognize a new book on the shelf.

I still have the same love for the library, and I still get a little carried away with how many books I check out. Libraries are one of the most sustainable ways to read books and magazines. For every book bought, hundreds, if not thousands depending on the popularity of the book, of people will read it in its lifetime.
Before you buy your books, be sure to check and see if your library system has what you are looking for. You will not only save money, but that’s one less thing you have to store (and potentially pack if you will be moving in your future) and resources saved.

Natural ways to stay energized

It’s no secret that we are addicted to caffeine. Energy drinks and now shots line the shelves of grocery stores, restaurants, and even board rooms. It has become completely aceptable to live off of these synthetic stimulants, and now they aren’t just being marketed to office workers who are feeling a little sluggish on the job. Commercials are constantly asking if we are “tired” have that “3:30 feeling” or “need a nap.”

But instead of feeding your body harmful synthetic chemicals and putting it through the stress and addiction of caffeine, try some natural and sustainable ways to wake up instead.

1. Get more sleep. It doesn’t get more basic or necessary than this. Without enough sleep your body just can’t function at the same level you want it to. How much sleep you need is really up to your body, so start going to bed earlier until you find the right balance to not make your alarm clock your mortal enemy.

2. Eat regular meals. Fueling your body can keep you alert and energized throughout the day.

3. Take a short walk. Even if you just get up and walk around the office or do a quick lap of your house, walking brings your heart rate back up and can give you that little bit of energy that you need.

4. Breathe. While breathing can be relaxing and help you sleep, a few deep breaths can re-energize you.

5. Exercise regularly. Exercise can keep you your energy more constant and keep you from crashing during the day.

6. Do some yoga. There are a lot of energizing yoga practices that will help wake you up when you need it most.

7. Get outdoors. The sun and the fresh air will do you some good.

Summer internship

In the past four days I have moved 50 miles away, started one of my two jobs, and started my internship. This summer I have the incredible opportunity to be an editorial intern for Yoga Journal! I had my first day today, and I can’t wait to go back.

Tomorrow I will get back on track and start sharing all of the wonderful things I have planned.

E-waste

Yesterday a film I made last year won an award at the Genesis Film Festival. It was unexpected, but pretty cool. Check it out.

Cutting Back: Magazines and Keepsakes

While packing I have come to realize just how many items I have been holding on to that don’t serve any purpose other than to remind me of something. I keep finding magazines with that one great article I want to read again or ones that I think could be a potential place for me to work in the future. I also keep finding movie tickets and little keepsakes like the beautiful empty bottle of prosecco from my 21st birthday.

Instead of trying to find room for all of this stuff and dragging it from school to my parents’ house and back again, I am letting go… sort of. I have been cutting out those articles that I really want to keep and putting them all in a single folder, a lot like my yoga binder. As for the keepsakes, the little tickets and notes from friends I am keeping, but the bigger items like the bottle will be digitized and stored with the rest of my pictures from that event.

Through this entire week I think everyone in my apartment has become addicted to giving things away and cutting back. It feels amazing to let all of these things go and only keep what I really need.

How did we get so much stuff?

Sorry for the lack of posts these last few days, school has been crazy, and it turns out moving out of a six person apartment is more work than we all expected.

how did we get so much stuff?

It seems like we somehow managed to accumulate more and more things this year. Yesterday I was helping one of my roommates pack her room and she kept stumbling across things she didn’t even know she had. She had an entire plastic bin (large enough for me to comfortably fit in) of clothes from high school that wouldn’t even come close to fitting her now. She is known for holding onto things for years, and we finally got her to let go most of her unused things from high school and freshman year.

We have all been putting forth a serious effort to cut back on our stuff, and not having to carry it up and down the stairs while moving out is a huge incentive. In the last four days alone we have donated more than five 30 gallon trash bags full of clothes and other usable items. It has turned into a game where we try our best to fill the donate bags and boxes as quickly as possible so we can take it downstairs to a donation location set up by SCU. We cheer and high five every time we fill a bag, and it makes it feel even better to clear our clutter.

52 uses for coconut oil

Coconuts are the newest health food craze and miracle problem solver. They are everywhere from the personal care aisle to cooking. As much as I hate to admit that I am going along with what is most likely a trend, I’m in love with coconut water for a post workout pick me up and coconut oil for just about everything.

When I found this list of 52 uses for coconut oil I couldn’t stop myself from sharing some of my favorites.

1. Hair and scalp treatment: on weeks when I have multiple workouts  or I have to straighten it, my hair gets incredibly rough and my scalp itches like crazy! I heat up a tablespoon of the oil and rub it on my scalp as if it was shampoo and through my hair. Let it sit for at least 20 minutes before you wash as normal. My hair stays soft for days and my scalp is significantly less oily than normal and not itchy.

2. Hair styling: just a little bit tames fly aways and makes my hair look shiny and smooth

3. Incredible for cooking and baking

4. Shaving cream: the warm oil makes shaving less painful and my legs are wonderfully moisturized afterwards.

5. As a “lotion”

6. Make doors stop squeaking

7. Dry skin moisture balm
